I have a lot of thinking left to do on this topic, but one thing is for sure. When looking for a job, interviewers care more about your what you have done rather than what you can do. If you can show a potential employer your past accomplishments they will have confidence in hiring you over someone else.
This is what really career driven people do. They get hired, build up a bunch of accomplishments and credentials, then move on to the next job and do the same thing. Rinse and repeat. Within 10 years you can have a nice steady job that you can call a career, even without a university education.
